This duo was created by André Terrail from recipe books handed down from generation to generation. The salt and the Mazarine sauce are made in the kitchens of La Tour d'Argent in Paris by Chef Yannick Franques, Meilleur Ouvrier de France, this sauce is made from fresh duck, herbs and orange juice.
Reheat few minutes the sauce in a hot-water bath. Then pour it over your dish and add a pinch of salt.
