The ceremony of this eleventh edition was held in Paris on Tuesday, October 11 at the union of Bakers-Pastry chefs of Grand Paris in the 4th arrondissement. The opportunity to highlight the know-how of the artisan bakers, who had to produce organic bread that met the following criteria, exclusively organic:
- A weight between 500 grams and 600 grams maximum after cooking,
- A salt content of less than 18 grams compared to the kilo of flour,
- A ball shape without seeds or decoration,
- Compliance with the regulations applicable to organic bread
The jury was made up of professionals and gourmets who made their choice after establishing scores based on the following characteristics: taste, cooking, crumb honeycombing, smell and finally the visual aspect.
We are proud that our Chef Boulanger from Le Boulanger de la Tour is rewarded for his work at the end of this ceremony. He won tenth place on Tuesday, October 11, out of a total of 116 competitors. Congratulations to him!
