The domain
The estate belongs to one of the oldest families in Chablis; the first vineyard plot of the estate was already cultivated by Jehan Droin in 1547. The Droin family has worked hard for the Chablis appellation, particularly Jean-Paul Droin. Thus, the estate has achieved excellence thanks to an exceptional knowledge of the terroir passed down from generation to generation.
The wine
This Chablis from the Droin estate is a faithful expression of the terroir. Indeed, the indigenous yeasts lead the fermentation. The use of stainless steel tanks allows the wine to retain its varietal character and the freshness coming directly from the terroir. Coming from very sunny plots, the wine shows evident notes of ripeness with aromas of stone fruits and white flowers. Malolactic fermentation is carried out to bring complexity and roundness to the wine. This cuvée reveals notes of citrus and green fruits such as pear.
