This growing exposure to the risks of high temperatures and other climatic hazards requires winegrowers to adapt new methods in the cultivation of their vines as well as in their vinification in order not to lose quantity and quality. Indeed, maintaining the quality of wines is one of the main challenges of climate change. Water stress, sudden changes in temperature or frost, directly impact the quality and / or quantity of the harvest, and this is felt on the style of wines for several vintages. The wine industry, aware of these hazards for several years now, has implemented strategies and solutions in the cultivation of the vine in order to acclimatize to climatic changes such as
- The practice of new techniques of vine cultivation (The rehabilitation of polyculture by planting trees in the vineyards, rootstocks, new soil management)
- Revalorization of cooler terroirs: northern and eastern exposure, at altitude...
- The emergence of new grape varieties within the appellations
- Use of new technology and artificial intelligence to follow the evolution of the vine in real time.
This question of adaptation is also valid for consumers, who will have to get used to this "new viticulture", to consume "responsibly" and to favor wines produced in the respect of the environment.
