The domain
Jean-Marc Boillot created his estate out of passion in 1985 in Pommard, in the heart of the Côte de Beaune. His daughter Lydie now embodies the next generation alongside her partner François, and nine people work alongside the family to provide their expertise. In practice, they prefer a very dense planting that induces competition among the vines, resulting in deeper rooting of the grapevines. Mr. Boillot has a particular fondness for the old Champ Canet vines that were planted by his ancestor.
The wine
Wines from Épenottes stand out for their stronger, tannic structure, often accompanied by notes of dark fruits, leather, and spices. The soil is generally more clay-limestone, which contributes to a certain depth and complexity.
