Clément Hamette
Son of the fifth generation, Clément perpetuates the family's traditional exploitation located near the Fontainebleau forest since 2019. The beekeeper works with about a thousand hives installed in Bourgogne-Franche-Comté, Île-de-France, and Centre-Val de Loire. He proposes several gourmet recipes such as pollen of flowers, but also rare kinds of honey, by moving the beehives following the blooming of flowers, a process known as transhumance.
