The vineyard

Clément and Caroline Lavallée took over the family estate in 2019 and now manage the 14.5 hectares of vines in the Auxerrois and Chablis regions. Respect for nature is at the heart of their philosophy, and Clément and Caroline have decided to keep the use of sulphur and chemicals to a minimum.

The wine

At Saint-Bris, a Chablis appellation, the king of grape varieties is Sauvignon Blanc. At Domaine Lavallée, Sauvignon Blanc is harvested by hand to ensure the quality of the grapes. The wine offers notes of white flowers and green fruit, and is distinguished by its aromatic persistence.
