In the footsteps of his father and uncle before him — two itinerant cider-makers in the Brie region — Pierre-Marie Fahy makes an artisanal cider from local organic apples. Heritage varieties, sustainable agriculture and short circuit supply chains are the watchwords of this estate. The patience and traditional knowledge demonstrated by the young arborist, who began taking over the family business in 2014, have earned him numerous awards.
