It was quite a long-awaited reopening. After a 15-month spectacular renovation, our guests live the Tour d’Argent experience in a brand new space, imagined by our architect Franklin Azzi, and the Tour d'Argent owner André Terrail. Every service is a spectacle that comes to life for our guests. In the kitchen, now open on a breath-taking view, the ballet of the Chefs’ hats follows the rhythm of the signature dishes announced at the pass. In the dining room, our team of Maîtres d’hôtel and sommeliers continues to make the admiration of our guests.

The sommelier's job: between excellence, elegance, and expertise

In a cellar as prestigious as the Tour d’Argent’s, our Head Sommelier hasn’t the only mission to advise our customers. It is upstream an impressive work of conservation and selection, to enrich the cellar and preserve the treasures it contains.

Tour d’Argent and Wine: An Extraordinary Story

The treasures, legend, and prestige are owe to Claude Terrail, the father of the current owner, who played a heroic role for Tour d’Argent by walling up the cellar in June 1940 and protecting by doing so a lot of exceptional bottles from a take of the German invaders. Described as the new guardian of this legendary place, Victor González takes care of our Cellar, therefore succeeding David Ridgway who built it for more than forty years.

New architecture, new goals?

In an era where wine consumption and demand evolve and get rarer; pleasure, conviviality, and shared moments rhyme with rigor. The expertise of the sommelier becomes essential. Victor González is committed to these new goals supported by his team of nine sommeliers, optimizing his speech, propositions, and expertise, in order to offer the best answer to the customers. Every wine proposed has to match the dish, desire, taste and budget of the customer. It is a tailored work every day. Our wine bible is daily updated depending on the new wines ready to drink, the Chef’s recipes, and seasons. This process allow the cellar to be more lifeful and dynamic. The sale of old vintages gives room for the new ones to age, as their elders, in optimal conditions. Nowadays, beside getting to have a Burgundy Grand Cru at our table, you can also discover new trendy estates carefully picked by our Head Sommelier, who travels across the French vines, looking for the best terroirs and winemakers.
