The Crêpes Mademoiselle

Crêpes Mademoiselle, the iconic dessert of the Tour d'Argent, appeared on the restaurant's menu under the name of Crêpes Belle Epoque at the beginning of the 20th century.

In 2016, this recipe was revisited and its name changed to "Crêpes Mademoiselle" as a tribute to all the women who have enjoyed this gourmet dessert in our restaurant. This recipe, as we serve it at the Tour d'Argent, is prepared in the dining room by our Head Waiters and performed in front of our customers according to a meticulous ritual. The highlight of this production: the flambéing of the crêpes in Fine Champagne cognac.

Today, this dessert is available from our shop for you to enjoy. Our sumptuous crêpes are immersed in an infusion of Grand Marnier, Cointreau and Mandarine Impériale. First seared in a mixture of butter and caramelised sugar added to Tour d'Argent Fine Champagne cognac, we then give them time to soak up the irresistibly creamy sauce. A delicacy prepared in our kitchens, flavoured with orange and accompanied by delicate orange peel.

Secret de dégustation :

Sortez le pot du réfrigérateur 30 minutes avant de servir, choisissez vos plus belles assiettes, et en un tour de main, dressez au centre deux pièces de crêpes, servez avec une boule de glace à la vanille de Madagascar ou une crème montée à la vanille selon votre préférence.
